Watermelon Feta Salad

This is my go-to side dish in the summer. It is perfect to bring to a barbecue or any outdoor event. It’s so easy to make and the flavors together are absolutely divine. I actually used to put a balsamic glaze on top but lately I have been loving it without any dressing at all because the flavors together are just enough to make it delicious all on its own. Here is everything you’ll need.

Ingredients:

  • Half of a large watermelon (this is what I prefer taste wise) or one small watermelon, cubed

  • 1/2 English Cucumber, sliced and cut into half moons

  • 1 c blueberries

  • 1 c strawberries, sliced

  • 1 block of Greek feta (I recommend getting one in brine so the cheese is fresh and tender - some feta, especially crumbled feta can be very dry)

  • 1/2 c coarsely chopped mint

Directions:

Put all the fruit and cucumber in a large mixing bowl. Add the feta and mint on top. Mix gently when you are serving.

Notes:

You can also add in some red onion or balsamic glaze and crushed pistachios. I have done both and I honestly prefer the simpler version.
