Drunken Noodles with Chicken
Y’all I cannot believe how delicious these noodles turned out! You MUST make them. They are so much better than takeout. I will say I may have added a little extra spicy pepper to ours and we may have been slightly sweating while eating them but we loved every second of it 😆 Here’s everything I used:
Noodles
Ingredients:
3 garlic cloves minced
2-3 green onions thinly chopped
1-2 tb spicy Aleppo pepper or red pepper flakes
1/5 tb apple cider vinegar
3 tbs soy sauce
1/5 tbs chili paste (optional)
2-3 tbs avocado oil
~ 2-3 c noodles of choice (honestly just wing it - don’t overthink it 😉) I used thick cut vegetable noodles.
Directions:
Bring a pot of water to boil and add noodles. Cook for ~ min or until the noodles are tender (taste one to make sure it’s cooked to your liking) then drain and set aside.
Add everything except oil and noodles to a large mixing bowl. Put the olive oil in a skillet on high and heat until slightly Smokey. Then add the hot oil to the mixing bowl then add noodles and stir together.
I love to pair this with chicken breast and some vegetables.
Stir fry Vegetables
Ingredients:
1 purple onion (cut in Half then cube)
1 bell pepper (I used red - sliced)
1 head of broccoli (cut into smaller florets)
1 tbs olive oil
Directions:
Cook in skillet on high and cover with a lid so the vegetables get slightly charred.
Chicken Breast
Ingredients:
3 boneless skinless chicken breasts
1 tbs Greek yogurt (to keep it moist)
1/5 tb black pepper
2 garlic cloves
1/2 ts salt
1 tbs olive oil
Directions:
Mix everything in a mixing bowl and marinate for at least 30 min. Then cook on a wire rack with a baking tray under it to collect the juices at 425°F for 25 min
Then cut into pieces and add to the bowl of noodles with the vegetables annnnd chow down!
