Chicken Kebab Thighs
I LOVE chicken kebabs so much so I decided to make chicken thighs using the same spices without the added work of the kebab. I mean this is a bold statement but I personally think these are the best chicken thighs you will ever eat. They are SO damn good. We make these at least one a week and they never disappoint. Also, chicken thighs are the most underrated part of a chicken in my opinion. Chicken breast is so dry and what everyone seems to cook but once you go thigh…it’s hard to go back! Here is everything you’ll need:
Ingredients:
2 Lbs of Chicken Thighs (I use bone in)
1 Tb Full Fat Plain Greek Yogurt
8 Garlic Cloves
1 Tb Tomato Paste
1 Tb Extra Virgin Olive Oil
1.5 T Sea Salt
1 T Black Pepper
1 T Thyme
1 T Parsley
1 T Cayenne (optional for heat)
Juice of Half a Lemon
Directions:
Pat the chicken thighs with a paper towels to get the excess moisture off. Then in a large bowl add the chicken, yogurt, tomato paste, olive oil, spices, and lemon juice. Mash the garlic with a mortar and pestle (pro tip: always add in a little salt when mashing garlic) or just chop it up and add to bowl. Mix everything thoroughly and then cover the top with aluminum foil or a plate and put in the fridge to marinate for at least 2 hours. The longer you leave it in there - the better!
When you are ready to cook:
Using grill racks on oven or grill: Preheat to 425 degree F (spray some nonstick olive oil spray on the racks): Cook each side for 7 minutes
Cast Iron: Preheat oven to 425 degrees F. Put 1 tb of olive oil in cast iron on stove top on medium high heat. Sear both sides of chicken for 3 min then put in oven to finish for about 8-9 minutes.
