Red Lentil Soup

This is honestly one of my favorite soups in the world and a fan favorite in the Lasso household. We try to make it once a week and rarely have leftovers. We literally crave it! The best part is it is the perfect lazy recipe because you can just dump everything in a pot and come back in 30 min and it is done! The soup is so unbelievably tasty that you would never think it is full packed with nutrients.

Red lentils are so nutrient dense and have been consumed since the beginning of civilization. They are a plant based protein, naturally gluten free, high in dietary fiber, iron, potassium, folate, and phosphorus, help regulate blood sugar levels, and good for your heart, bones, teeth, skin, and brain. Do yourself a favor and just google the health benefits of lentils and be amazed. Also, do yourself a favor and make this recipe! Here’s everything you will need.

Ingredients:

  • 3 Carrots

  • 1 Yellow Onion

  • 2 Potatoes

  • 4 Garlic Cloves

  • 1 Tomato

  • 2 TB Extra Virgin Olive Oil

  • 1 C Red Lentils

  • 6 C Water or Broth (I usually use water)

  • 2.5 T Salt

  • 1 T Black Pepper

  • 1 T Oregano

  • 1 T Cumin

  • .5 T Paprika

  • 1 T Cayenne (Optional for heat)

  • Serve topped with juice of half a lemon and fresh parsley

Directions
Start by washing and peeling the carrots, onion, potatoes. Peel the garlic. Then cut all the vegetables into chunks. The size does not matter here because it is best to blend the soup once cooked.

Add olive oil to a large pot on medium-high heat and sauté the vegetables for about 6 minutes. This will give the soup a more hearty flavor. Then add in the water, lentils, and spices. Bring the mixture to a boil then turn the heat down to medium (I use level 5 on our stove top); this will prevent the soup from boiling over. Cook for 30 min. Then run through a blender or immersion blender.

Serve in bowls and top with fresh squeezed lemon juice and fresh parsley garnish - enjoy!
